Ayam Ingkung (Javanese syle yellow roast chicken)



Uuughhh... i can't decided which picture should be on top, they all looks good and I'm so satisfied with my pics result, i was taken those pics on the backyard of my house, because the lights just perfect, although my camera is just the small one, i was dream to have a professional camera one day (could be soon too, he he).
But I'm thinking, am i just gonna waste my money for that kind of camera?, is it gonna be useful gadget for me?. I just don't know the answer, pls help me decide...
OK enough dreaming...
Now, lets talk about this yummy, delicious chicken. Like i mentioned before I'll started to cook more Indonesian food, but i started from Javanese food (My Dad came from Middle of Java), I'm a chicken lover, and many dishes in Java that using chicken as a main ingredients, so its perfect food style for me.
Later i want to try Sundanese food too (My Mom is Sundanese), but we have limited ingredients here (not common and so difficult to find).
To make this Chicken dish we need:
Ayam Ingkung (Javanese style yellow roast chicken)
ingredients:
  • 1 Chicken
  • 2 tablespoon lime juice
  • 1 teaspoon salt
  • 4 tablespoon oil
  • 3 lime leaves
  • 3 bay leaves (salam leaves)
  • 2 lemongrass,brushed
  • 3 cm ginger, brushed
  • 1 tablespoon tamarind water
  • 2 tablespoon palm sugar
  • 1 teaspoon salt
  • 750 ml coconut milk

Grind ingredients:

  • 6 eschallot
  • 5 cloves garlic
  • 8 red chillies
  • 3 candle nut
  • 3 cm turmeric
Method:
  1. Preheat oven to 170 degrees.
  2. Wash Chicken, marinated with salt and lime juice for 15 minutes. wash again.
  3. Stir grind ingredients (paste) in a large saucepan over medium heat for 1-2 minutes,add lime leave, salam leave, lemongrass,and ginger, cook for another 1 minutes until fragrant.
  4. Add chicken, coconut milk, tamarind water,palm sugar and salt, cook for 20 minutes (until the chicken is tender).
  5. Put the chicken on the Pyrex plate, roast until crisp, serve with warm rice .

(My style: I didn't use coconut milk and i only use half chicken)
