I love having lots of salad this summer (thank God we still have some summer days here in Melbourne even thou it is officially Autumn), quick and easy to make. Some people think I'm on diet. In fact I tried to always fresh, clean and healthy eating and not necessary starve my self. Yes I have lost my weight but in a good way, and for me its a bonus because I exercise daily, managing my food intake and been avoiding junk food/ drinks.
I still eat my favorite Indonesian food too once in a while (curry, spicy, rich in coconut milk or some fried food) but as I said in my previous post everything have to be balance to maintain healthy lifestyle.

This is one of my dish invention, all you need is:
1 small cucumber, sliced
Cooked beetroot, sliced oryou can use can beetroot or roast them for 40 mins, wrap in the foil (don't forget to add a splash of water in it)
Small block of feta, crumbled
For the chicken I used chicken breast fillet coated with ground cumin, sweet paprika powder, dash of salt, oregano, basil, olive oil and black pepper then roasted in the oven for about 40 mins.
Then arrange on a plate.

<span style="font-family: Georgia,"Times New Roman",serif; font-size: small;">As long as I have time to spend in the kitchen I will be more than happy to make her healthy snack for her everyday recess at school. <span style="font-family: Georgia,"Times New Roman",serif; font-size: small;">They use a little sugar because there are natural sugar added such as honey and dried fruits and that is why I love this recipe.
I started juicing last year and really got the result just like I want stronger hair, less headache, stronger immune system, normal skin, which usually very dry etc. And then I got very busy (or lazy??) for a couple of months trying to juggle between study, housework, family and have so limited time spending in the kitchen, especially for juicing.

I physically active (because I was study to become fitness instructor) but my nutrition was suck especially with fruits and vegetable which I'm so lazy to eat them during the day. So I started to get my old symptom of hair fall, headache etc. I wasn't happy with my self again until I told myself to start my juice habit and , so here I am trying hard to keep consistent making my life balance again with healthier eating and regular exercising :)
The juice I made mostly from the book from Jason Vale (the Juice Master) . Always taste yummy!

Remember, never put banana or avocado in the juicer, put in the blender instead with the juice. Enjoy!

Having healthy & active style is pretty easy. I never tell my self to go on diet, but instead I said I want to be more healthy, many people try to do diet and what happen is that they gain more weight than before they even started their diet! For me its true.

I recently watch the program called Fat, Sick and nearly Died and I am agree with them 100% :)
I remember what was my everyday breakfast 7 years ago (when I just arrived here) and I compared to now, it is so much different and I am not going to come back to my old breakfast food :)

I was always felt tortured when my hubby told me to eat healthy cereal, and why did he push me to eat cereal? because I was complaining all the time that I had constipation. Now I thank him for this ha ha...
It is pretty much our brain taking role on any habit we having isn't it? if we want to break ANY habit we can't just force our self straight away, but instead we can do it slowly and consistent. Then after we have a new healthy habit we can (again) slowly start improve our fitness level.

Don't forget to discuss with your doctor if you have any health issue. Walking everyday is very good start with minimum 30 minutes each day. Here is some copy form Australian Government Department of health and aging website.

Physical activity guidelines for adults

There are four steps for
better health for Australian adults.

Together, steps 1-3 recommend the minimum amount of physical activity
you need to do to enhance your health. They are not intended for
high-level fitness, sports training or weight loss. To achieve best
results, try to carry out all three steps and combine an active
lifestyle with healthy eating.

Step 4 is for those who are able, and wish, to achieve greater health
and fitness benefits.

Step 1 – Think of movement as an opportunity, not an inconvenience
Where any form of movement of the body is seen as an opportunity for
improving health, not as a time-wasting inconvenience.

Step 2- Be active every day in as many ways as you can
Make a habit of walking or cycling instead of using the car, or do
things yourself instead of using labour-saving machines.

Step 3 – Put together at least 30 minutes of moderate-intensity
physical activity on most, preferably all, days.
You can accumulate your 30 minutes (or more) throughout the day by
combining a few shorter sessions of activity of around 10 to 15 minutes
each.

Step 4 – If you can, also enjoy some regular, vigorous activity for
extra health and fitness
This step does not replace Steps 1-3. Rather it adds an extra level for
those who are able, and wish, to achieve greater health and fitness
benefits.

I always try to avoid junk food or process food. Healthy meal is not necessary complicated to make, for example simple salad sprinkle with any nuts for protein or even this kale chips for snack. Ok enough Blah blah...
All you need to make this healthy snack is a bunch of organic kale(I grow some in my veg patch), olive oil and some sea salt, remove middle stem from kale washed well and pat dry with paper towel, toss with some olive oil and sea salt then baked in the pre-heated 160° C oven for 20-30 minutes or until kale is dry and crisp.
Yummy!!
Recently I visited our local library to borrow some cooking book, feel like I'm in a cooking mood lately :) especially since I started using my "big" camera again. So here I am promised my self (one more) to actively update my blog. Aaahh... I love summer where the day is longer so I have a natural light for photos plus nice, easy, and fresh cooking. Lucky I didn't have fussy having husband and daughter. They pretty much will eat anything I cook for dinner or even having just simple salad for dinner on a very hot day :)
I wasn't planning to cook this dishes today because I bought salmon fish instead of blue-eye cod fillet. Anyway the taste still delicious and I'm glad about changing my mind. The other thing I did was cooking the fish in the oven (baked) for 25 minutes. That way my stove top is clean *wink*.

There is a small story behind this yummy dishes today. As usual I have a bad habit of not reading the recipe properly (just a quick reading).

Today realised that I didn't have any cilantro in my fridge nor in my veg patch (already seeded and becoming coriander seed), with my sore thigh (too much exercise yesterday haha..), I went to 3 different places just to get those cilantro. And guess what? on the 3rd store it was the last one!, looking very sad because its wilted. Anyway I'm happy with the overall result though.

Here is the recipe I got from Marie Claire "Crisp". Happy cooking...

Lime-marinated fish

Ingredients:
4 blue-eye cod fillets mine is salmon fillet)
2 kaffir lime leaves, thinly sliced
2 lime, juiced
1 red chilli, seeded and finely chopped
1 teaspoon fish sauce
2 tablespoon grated ginger
3 tablespoon olive loil
80 g coriander (cilantro)

Method:
Put kaffir lime leaves, lime juice, chilli, fish sauce, ginger and olive oil in a large bowl. Stir to combine. Remove the stems and roots from the coriander and wash carefully. Finely chop and stir into the marinade. Add the fish and toss until well coated. Cover and leave in the fridge to marinate.
Heat a frying pan over medium heat and add the fish fillets. Sear on one side for 3 minutes before turning the fillets over and cooking for a further 3 minutes, or until they are cooked through.
Put a large spoonful of tomato rice on each of the serving plates. Garnish with the coriander leaves and top with the fish fillets.

Tomato Rice

Ingredients:
1 tablespoon sesame oil
1 onion, finely diced
1 garlic clove, crushed
3 ripe tomatoes, diced
200g (1 cup) basmati rice

Method:
Put the sesame oil in a large saucepan over medium heat. Add the onion and garlic and cook until the onion soft and transparent. Add the tomatoes, rice and 1/2 teaspoon sea salt and stir for a minute before adding 375 ml (1 1/2 cup) of water. Raise the heat and bring the rice to the boil. Cover the saucepan with a lid and reduce the heat to low. Leave covered for 20 minutes and then remove from the heat.

Here is another simple yet divine food for Indonesian :) It is so hard to get this particular salted squid, they (one of Indonesian supermarket here) only have them once in a while.

I cooked all of my squid from the freezer (thawed first of course), because I was planning to clean the whole fridge and freezer :) I just hope that my fridge will last more longer as we had our food not as cold (and not frozen) last week. My husband said he had them for 30 years! older than me obviously haha... It is that Kelvinator brand, the best brand and tougher in its years, they don't produce anymore now.

I only put sliced shallot, small red onion, lots of green and red chillies and sautee them in a little oil then add small amount of water to cook the squid until dry out again, no salt need it though :) It is optional to cut the squid into small pieces or no, and i usually add slice of galangal and salam leave to give a good fragrance.
Melbourne weather today is reaching 37degrees, I am planning to just staying home and invite some friends over and have some lunch together.

It was much cooler this morning so I prepared all my ingredients early morning and started cooking quite early too. There is nothing special on the menu, but we love them because i didn't cook this as often as before. This recipe I got from my dad and we usually fried them only to get the batter to set.
It is very yummy to eat this tempe with warm rice and sambal.

All you need is tempe/tempeh...cut into medium thin rectangle, some plain flour, sliced spring onion, a dash of salt/ chicken powder, coriander and crushed garlic, pour in some water and mix them all until you get fairly thick batter then deep fried them with coconut oil/ canola oil / sunflower oil (leave the tempe until last to the mixture if you prefer and don't forget to taste your batter!).
Hb Heloo all... It is summer here in Australia, but Mr Weather sometimes still got confused, we are still using our heater at night :)

I have to push my self to update my blog before it gets rusty haha... I've been busy studying Fitness, half way to become Personal Trainer :) apart from that I also been working out almost everyday to get my self strong haha...

Anyway we weren't planning to have any birthday party for my daughter
this year as she has a big one last year, but luck was on her side,
because fortunately I won some party package hamper on the silent
auction held in her school, so I decided to make a little celebration
with her classmates in the park.I have been praying that the
weather is going to be nice on that day because it has been rainy nearly
all week, and guess what? we did got a nice weather after all :).

The kids was surprised to see the rainbow cake and they are getting full because we had our cupcakes as well. I can see some of them only eats the icing sugar..

It took me a few hours just to bake the rainbow cake because I have to bake them separately and I only had 2 round tin, so I made the batter twice and bake 2 different colour cakes at the same time.

We had Cheeses and dips (with the crackers and cucumber, carrot) marshmallow, watermelon, grapes, lollies, chips, fairy bread, pretzel, juice & soft drink, popcorn, shapes and cheese rings (I forgot the name!)

Back
to the cake, I was so tempted to make a rainbow cake for a while so
here is my rainbow cake with simple decoration and cute owl. I think
towards the end of the year I tend to make a couple of cakes because of
our birthdays :).

Overall it was awesome party, great friends, good weather!! Thanks to my friends that helps me cleaning up after party as well :) XO

Enjoy your day and my pictures...
I did my flu shot but seems like doesn't help much as I got sore throat and flu twice already!

When the day so cold and gloomy, I just stay at home with my daughter this school holiday, baking cakes or cookies, making organic juice or smoothies or just snugling together :) oh and spending some time in my sewing room making things for sale or for my darling girl :)

This roll cake was very yummy and I've been craving for a while.. I know this will make me fat haha. They high in colesterol as I put 6 eggs in it.

I need to payback when the school holiday finish (my excuse), been so lazy with my exercise..

Anyway I will start my school as well and that will include some exercise haha...

For now enjoy this picture and have a great weekend guys...<div class="separator"style="clear: both; text-align: center;">
Tihttp://www.blogger.com/profile/10402451376387263665noreply@blogger.com0tag:blogger.com,1999:blog-1184008748572269045.post-6816795533630560022012-04-06T10:43:00.002+10:002012-04-06T10:45:50.418+10:00Agry Bird cake for Alaric
So far I've been making 3 sets of angry bird cake, and this is the second one.. I forgot to take a picture of my first angry bird cake because I was so busy preparing anything else for the party as I'm the EO too haha... It is really fun making those small angry bird figurine and I never get bored making them over and over again!

My dear friend Jehan order this for her oldest son Alaric and because she knew that her younger son will be jealous and his birthday also coming up soon, she already ordered for her younger one a month ahead too. Happy Birthday Alaric.

This cake I made along with another cake (Princess Castle.. coming up soon) and held in the same place of our friends Ajeng and it is actually a day after that dinosaurs cake I made earlier.

Unfortunately once more I haven't got time to take the picture at home as we have to go straight to the party, this time I also bring the cake separately from the angry bird figurine in case they fall everywhere.
Happy Easter everyone!
But if you don't, let me tell you a little bit about him... Timmy is a cute cartoon lamb in the show called "Timmy time". My daughter used to watch it every night. And this bento actually made last year when she was at kindergarten ツ

I couldn't keep up with bento lunchbox anymore because it's really time consuming and very messy job for me as an amateur, also with lots of left over bits and pieces of food. This was a sandwich and "timmy" made from cheese and nori sheet.

It was a very hot day and I knew I should have make the neck at least 2 days before to support the head so it will be strong, so as I was expected the neck was a little bit broken because it cannot support the head plus the heat make worse, also the hat's streamer is all broken because of the box was moving a lot during the travel.

When I got there I quickly request some dowels to give more support and patch some broken part and putting the cake on the colder room which is her main bedroom with the AC on full :)

I never make half round cake before (for the body) and I didn't have any round bowl, so I just made an experiment using my medium mixing bowl and it worked! from what I read from someone's blog (uhh.. forgot to bookmark it) she said to put the flower nail in the middle of the bowl, so that the heat is even and the cake will cooked trough and yes it is really working, it isn't really round (a bit flat) like I wanted and I am a bit worried it will look like a turtle but it's actually ok and still looks like a cute dinosaurs. Lucky me..

Unfortunately I was in a hurry to take a proper picture at home, so I took it when they nearly cut the cake with the head getting down... and I didn't take enough picture to show the whole body and tail/ Oh well at least it wasn't so bad :)
I've been busy with my old hobby now.. cake decorating. Some days I feel like doing crafting but this days I love my cake decorating. I am still cooking dinner everyday and yes Indonesian food are still my favorite! apart from easy western meal :)

My Daughter is going to school this year, but I prefer not to make bento everyday like I used to when she was at kindergarten. I was thinking that if I make her bento I have to wake up very early in the morning and by the time she have it at lunch time, it will be spoil because she have to keep it for nearly 5 hours. I don't know... maybe I'm getting fussy. The idea that says you should always refrigerate your food (isn't it hard when there is no microwave to heat it up?) is really bugger me! and even with the sandwich they suggested to put ice pack on it to keep it cold.. In this case I always use frozen yoghurt to keep it cool and by the time she's ready to eat, her sandwich is nice and cool plus the yoghurt is already defrosted and ready to eat, but I would't worry too much on winter.

Anyway.. about this cake. I have this Wilton barbie dress tin for a long time and never really use it (what a shame hehe..) so I decided to make her barbie cake for the first time... I'm quite amaze because it wasn't long process for me to decorated this cake, hmmm.. lots of cutting and sticking fondant to the cake, I just love the result... Enjoy the pictures :)
I usually eat them for breakfast and sometimes snack too :) Making Indonesian snack is a bit tricky sometimes but it's all worthed because once they're done I want to eat more and more :-)

Here in Melbourne we have a few Indonesian supermarket and they occasionally sell some tools for Indonesian cake/ snack. It is a bit pricey but I'm alright with that for once in a while because I wouldn't bring them by my self from Indonesia, it's too heavy! or too big :-P

I went to Chinese groceries the other day and found quite a lot of Indonesian product / packet food there which is surprising (I wasn't expected at all) I suppose Indonesian product are getting famous (common) here. I would even find some products in any the local groceries here.

And Last night when I watched Master Chef Australia they using agar-agar powder (like gelatine) but it will set in the room temperature after cooked. They made me laugh because they spell it as "ega-ega" instead of "Agar-Agar" hehe...

Anyway, I got this recipe from my Indonesaian pocket recipe book :-) enjoy!
She wanted a mermaid theme cake, so I came up with this cake after browsing on flickr... because I baked the cake a day before, on the actual day only take me a bit quick to decorate :) We didn't have a big celebrations that time but I did invited some close friends for tea time, and bring one cake to her kinder for her friends and teacher . And i actually made 2 cakes but only one topper so by the time I finished with one cake I just use the same topper for another cake :P

She actually moved her kinder to the new one because we moved house, so this is really good to remind her about her 3 y/o kinder friends and teacher.
And for her kinder she also wore the cutie dress I made.
To be honest this is my red velvet cake ever. I heard about this cake for a while from Cake show on TV and promise to my self that I would try making it for special occasion. But somehow I haven't got any guts until one day I saw one of friend FB status mention about this cake and it's near my birthday..then... aha.. I got the idea to make this cake for my self a day before my birthday hahaha... *wicked laugh* ( because I wasn't really plan to invite any friends over).

I never seen any cake recipe using heaps of vegetable oil before. So I wasn't sure and cannot imagine what the taste would be like. When I started preparing the ingredients I just realized that I didn't read the recipe carefully (bad habit Ti!) that I didn't buy any butter milk! So I have to make butter milk substitute from a cup of milk mix with 1 table spoon of squeezed lemon.

Anyway... when I measured the flour I also have to admit my self that I am sooo.. not careful to check my pantry. I thought my existing flour would be enough for the recipe but once more bummer.. I'm wrong!! I only got about 1 cup of it. So I came up with the idea *ting* Because I have self rising flour sitting there in the pantry as well I used this for the the remaining 1 1/2 cup that need and put less (only 1/4 tsp baking soda). And bake it on the 2 small tin for about 1 1/2 hours.
Guess what?? it's all works.. Yippeee...

To be honest I really happy to see how the cake was turned up. So vibrant Red and looks delicious!

The best part of making birthday cake was to decorate it but I don't want any fancy decorations of course!.
(I only used half recipe of the cream cheese frosting ) With my daughter watching the whole process I could see her face that she really want to try the cake :) poor girl she have to wait until we cut it on the next day.

By the way I just wanted to say Merry Christmas & Happy New year 2011 ... Have a great time!
Uggghh.. I finally updated my blog again after a while. Been meaning to do that but always have many things to do. It’s weird weather going on here in Melbourne. It’s already December and summer supposedly here but what happen is very wet and cold days :(. Well I know we needed rain here.
I guess I just have to be patient until the weather get warmer so I can plan something to do outdoor with my daughter this school holiday. Can hardly wait..!!.

Anyhow... about this mini cake. I made it many times in the past and it’s one of my signature Indonesian dessert to bring If I invited by friends to their place or party as well as at my place. It’s quit light and moist. Believe it or not there is no butter or margarine needed for this recipe so no need to feel guilty eating more than 2 :). Because of the shape of the cake (rising and crack in the middle) we often call them laughing cake. So If the cake isn’t laughing means failed. I made similar rainbow cake here (no laughing type/ version) and another laughing steam cake with different flavor here.

Many of you probably wondering what Ovalett/ TBM is. Ovalett (or Ovalette) is a cake stabiliser/emulsifier used predominantly in the baking of sponge cakes or steam cakes. It gives the cakes a super fine texture. It is used to aid the beating process of egg yolks or egg whites to ensure its stiffness holds. It helps the eggs to rise rapidly and stiffly and also to remain stable therefore ensuring that eggs do not lose their voluminous texture. Ovalett ensures quick whipping properties and provides a remarkably stable batter that may be left unbaked for some hours. Ovalett produces a perfect sponge that is not too fragile, while providing excellent flavour and fresh keeping qualities.(source = Ovalett.com).

Many Indonesian cake / snack using this emulsifier. Nowadays You can find it quite easy in Indonesian supermarket here in Melbourne. As well as the special mould for this particular steam cake. So don’t be afraid to try and make this cake ok?. And email me if you have any questions.
One more tips from me is that you have to wrap the steamer’s lid with the cloth so that the hot water droplets from the steam is not dripping to the cake that can cause the cake wet and not” laughing”.
I remember exactly when was the last time I made this dessert. Back in 2001 at my kitchen school with my classroom mate "Theresia". We were always in the same group for our cooking class and mostly cook traditional Indonesian food apart from another pastry class that we learnt about various pastries from around the world and cake decorating. This dessert however very refreshing for tropical country like Indonesia or summer in western country. For mostly Indonesian food or dessert the more effort your doing the more better it taste.

It has been confusing weather here in Melbourne with some heavy rain and cold or very sunny hot days sometimes. I was planned to make this dessert last week because I thought it will be as hot as the past week and I was wrong. Because I already bought all the ingredients I needed I just carried on making it yesterday when the weather is cold :(

I have to hiding it from my daughter because somehow she got cough and runny nose again. I knew she would love this dessert as much as I do.Well maybe next time baby :)

I only make half of the recipe and Got the recipe from Indonesian online magazine called Femina

Some peoples must be wondering, what is the steamed brownies? how is it taste like?. And I bet when you see these pictures you think this is just a chocolate cake.

It is brownies, but steamed! . Well for Indonesian this unique cake is not unusual, there is very famous bakery shop in Bandung west Java selling the most delicious steamed brownies.

This brownies is not like any common brownies (well of course, because it is steamed and layered :P). I mean yes it looks like layered chocolate cake rather than brownies, as well as the moisture of the brownies and the sweetness. Because we use caster sugar plus sweetened condensed milk for the middle layer. But still we don't call it chocolate cake :).

Lucky me. I still have my huge steamer so I could fit my rectangular tin special for this brownies (import from Indonesia). I got the recipe from NCC written by Mrs. Liem.
Unfortunately, I didn't make enough batter of the middle part :( Anyway there is no doubt with the taste though...
