My first Black Forest



Hmm... I'm so excited to post this black forest, because this is my black forest creation ever!!, for the special occasion on Sunday 27 Jan, it is my husband's birthday " Happy birthday Darling, I love you..".
I know my self, if i make something like cake, and I'm getting nervous in the beginning, that means i will fail or something will go wrong, but with this cake, everything goes smoothly without any problem (and I'm not nervous at all), and so fun.
It doesn't need to spend more than 2-4 hours constantly, like any other cakes, because i baked the chocolate sponge cake in the morning (10 am), and leave it to cool down. Meanwhile i give my attention for my baby, feed her, bath, play etc.
Then i started to whip the cream after my daughter had a nap at 3 pm, (so i don't disturb her with the noisy mixer), and decorate them afterwards ( i also used imitation rum, no alcohol), less then 2 hours and taraa..... the cake is ready to show up on my birthday hubby!, best of all.... i didn't neglected my baby as usual if i make complicated cake ^_^.
By the way i made the chocolate fence on Thursday, and store it on the fridge until i need to used them, I'm so happy with the result, pretty and delicious. We only celebrated his birthday with his parents, me, and my daughter, and they all love it. Oh soo sweet, So does anyone want to try some?? hehehe....
i got the recipe from " dapur bunda" (Indonesian language), maybe next time I'll translate it :) .

Gluten free Burger


This burger originally used breadcrumbs, but i think steamed rice is better because no gluten on it, as usual, my daughter like it so much.
She could eat 2 at 1 meal, but i didn't serve it with the bread roll (as original burger). i found this recipe from toddler cooking book. Im actually not familiar with burger, but since i figure it out that my daughter is not fussy eaters, im happy to cook different thing for her, because i know that she's gonna enjoy it, and it makes me smile, best of all, she have healthy food variation, so she's not bored :) She's my good girl!

Gluten free burger

> Combine 500 gr lean mince, 1 beaten egg and 1 cup steamed rice.
> Add 1 grated carrot and 1 grated zucchini.
> Shape into patties or balls with wet hands.
> Cook over high heat on barbecue or in frying pan, about 5-7 minutes each side.
> Test by cutting open to check colour - it must no longer be pink inside.
> Serve with sliced cucumber and tomato.

Summer Cupcakes



Summer Cupcakes for my mothers group (again), but this time with the fathers, we had BBQ in one of their house, originally we planned to have it in the park, but seems to be a bad weather. We really had a good time there, 10 mums,10 babies and 10 dads, a bit crowded but very nice, im glad i know them.
I can't really make complicated design, because my daughter needed my attention (as usual ), so i only make green and white with some gumpaste flowers, and i used tip no 30 and 1m swirl, i was thinking to make grass and flowers, but i changed my mind in the last minute, but doesn't look too bad i think, not really tidy though... anyway im still learners . ^_^ Have a good day everyone.....

Veg Twist Pasta Bolognese

Yum...yum.... i love my pasta!!

This is one of my Daughter favorite food, she usually lazy to chew, but with this food she chewed very well, and she wants to feed herself, like a good girl should, a bit messy but its OK, its part of learning isn't it?, Mommy so proud of you Ellyn.

I put 1 extra big grated carrot, to sweeten the sauce instead of sugar, better for her. And we can actually use any kind of pasta.

Chicken with polenta & red capsicum ragout



Another experiment (im glad the taste is goood...), i should slice the capsicum smaller next time :) not require much time to make this food, I never eat polenta before, but after i tried that last time, i think i fall in love again,hehehe... its filling though, like rice but taste more plain without the cheese and butter.
I always try to make something new for our dinner, because on Monday, Wednesday and Friday, i got catering food delivered from Indonesian restaurant (im so lucky!), otherways im too exhausted spending too much time in the kitchen everyday, preparing food for us (me and hubby) and my daughter. like yesterday, i made three 4 different dishes all day! 3 for my baby (so i can freeze it, and doesn't have too cook for a while), and this dish for dinner, but i still need to cook though in between those days. I will post my baby's food later on.

It might sound fancy, but this balsamic-and-herb topped chicken dish will take you only half an hour to get onto the table.
Chicken with polenta & red capsicum ragout

Ingredients:
(serves 4)
  • 1 tbs olive oil
  • 4 (about 700g) single chicken breast fillets
  • 2 red capsicums, deseeded, thinly sliced
  • 1 brown onion, halved, thinly sliced
  • 2 garlic cloves, crushed
  • 2 tsp chopped fresh rosemary
  • 250ml (1 cup) chicken stock
  • 80ml (1/3 cup) white wine ( i used grape juice, halal)
  • 2 tbs balsamic vinegar
  • Polenta
  • 500ml (2 cups) chicken stock
  • 250ml (1 cup) milk
  • 140g (3/4 cup) instant polenta (cornmeal)
  • 30g (1/3 cup) finely grated parmesan
  • 15g butter


Method:

  1. Heat the oil in a large non-stick frying pan over medium-high heat.
  2. Season the chicken with salt and pepper. Add to the pan and cook for 7 minutes each side or until cooked through.
  3. Transfer to a plate and cover with foil to keep warm.
  4. Meanwhile, heat a non-stick frying pan over medium heat. Add the capsicum and onion, and cook for 5 minutes or until soft. Add the garlic and rosemary, and cook for 1 minute or until aromatic.
  5. Add stock, wine and vinegar, and simmer for 10 minutes or until mixture thickens.
  6. To make the polenta, place the stock and milk in a medium saucepan and bring to the boil.
  7. Gradually add the polenta in a thin steady stream, stirring constantly until incorporated.
  8. Cook for 2-3 minutes or until the mixture thickens. Stir in the parmesan and butter.
  9. Thickly slice the chicken diagonally across the grain. Divide polenta among serving plates.
  10. Top with the chicken and capsicum mixture. Serve immediately.

Mie Ayam Jamur ala Bakmi GM (Chicken, Mushroom and Noodle soup)


Another famous dish from Indonesia. We usually go to the special restaurant to eat this dish, this is authentic taste, and i got the recipe from from my friend Ami . We need some effort to make this delicious food, im glad that My hubby like it too!.
Ingredients:

Chicken Mushroom:

  • Chicken Mushroom:4 chicken fillet thighs
  • 2 tbsp sesame oil
  • 100 grams mushroom,sliced
  • 15 gr black fungus, blanched
  • 5 cloves of garlic, finely chopped
  • 2 tbsp olyster sauce
  • 5 tbsp soy sauce2 tbsp kecap manis (Indonesian sweet soy sauce)
  • Salt, pepper, to season


    Heat oil in a large, heavy-base saucepan, heat oil, add garlic cook for 1 minute.
    Add chicken until cooked trough, add mushroom, black fungus, soy sauce, kecap manis, olyster sauce, cook for further 4 minutes, season with salt and pepper.

Chicken Stock:

  • 2 Chicken thigh / Chicken stock
  • 500 ml Water5 clove garlic,crushed
  • Salt, pepper to seasonShallot, slices
  • 1 bunch Pak choy (Sawi :Indonesian), blanched
  • Fried onion for garnish

    Boil water in a large pot, add garlic and chicken thighs, cook for 15 mins,season with salt and pepper. Add shallot, set aside.

Noodle:

  • 4 fresh egg noodles
  • 1 tbsp oil
  • 500 ml water

    Boil Water, add oil and noodle, until cooked, drain

Finishing:


Place noodle in a large serving bowl. Top with chicken mushroom, fried wonton, blanched pak choy and fried onion, serve with Chicken stock and sambal oelek or chili sauce. Season with salt and pepper.

Fried Wonton

Fried Wonton:
  • 1 pack wonton skin 300 gr prawn, minced
  • 200 gr chicken minced
  • 1 egg
  • salt and pepper

Mix Chicken, prawn, egg, salt and pepper. Spoon the mixture on to wonton skin . Wrap it into triangle. Fried with deep oil, in a deep frying pan, until golden brown.

Rosemary lamb Chops



Delicious and easy dinner from last night, fresh herbs always better to marinated any kind of meat. I usually serve my lamb with some salad or veggies and potatoes, but i haven't got time to prepared those things, so i end up with boiling frozen mix vegetables, and enjoy it with my favorite bbq sauce, Yum... Mouth watering.
Rosemary lamb Chops
  • 2 tablespoons rosemary leaves
  • 8 lamb loin chops
  • Salt and coarse black pepper


Combine Rosemary, salt and pepper. Place cutlets under grill and cook for 3 minutes. Turn cutlets over and over uncooked side. Grill for a further 3 to 4 minutes for medium or until cooked to your liking. Serve with mix vegetables.

Spicy Chiken Liver ( Indonesian Sambal goreng hati)

For more hot and spicy result, you can always put more chili on this dish.

Spicy Chicken Liver

  • 400g Chicken liver
  • 6 tbsp oil
  • 1 onion
  • 7 small brown onion
  • 4 cloves garlic
  • 5 red chili
  • 1 tsp palm sugar
  • 1 Red tomato
  • pinch of salt
  1. Grind together Brown onion,garlic,chili,palm sugar, salt and tomato.
  2. Meanwhile,fried the chicken liver with 4tbsp oil until brown or until cook through,set aside.
  3. Heat the remaining oil in a saucepan, add onion and cook for 1 minute.
  4. Add crushed ingredients, cook for another 1 minutes, add chicken liver,cook for further 3 minutes .
  5. serve with steamed jasmine rice.

I always forgot to post this, I went to Australia's largest range of cake decorating equipment, which is "Cake Deco" . I knew this shop after i browse from Australian yellow pages,and they have on-line shop too. On that day we went there with my baby and my Cinta, but because the shops is a bit crowded with their range of product, so my hubby decided to wait for me somewhere around there, so i started hunting some equipment, im so impress with their shop, they have all of the wilton product. Hrrr ... i can't limit my budget, because so many things i want!!, so after long long hunting i got some things that i really need. And actually i can go there by my self (i mean with my baby and her pram) too, by train because the location is next to the Flinders street station, So here what i bought that day:

Macaroni Cheese


I was planning to post some baby food before, but always finish before i have a change to take the pics ^_^ so i'll try to take the pics of baby food from now on,before she finish them.
This dish is great food for my Little girl, she love this dish soo much, so i want to share this recipe.I think she recognize the cheese taste, but actually adult can eat too, why not? (except if we put baby milk on it). But i never put any salt on my baby's food, it may taste a bit plain for us, anyway its easy to make, and you can always put any vegetables that your baby like. (behind the scene: when i tried to take the pics, here she comes and saw the food, ohhh... she want it so bad! but she just had her breakfast, so i just let her cried for a while, and explain to her that is for her lunch :p ).
Macaroni Cheese
  • 1 cup macaroni
  • 2 tbs butter
  • 2 tbs flour
  • 1 1/2 cups(345ml) milk or prepared baby milk
  • 1 cup grated cheese
  • 1 cup corn kernels or cooked mixed vegetables (fresh, frozen or canned)
  1. Cook macaroni until al dente and drain.
  2. Melt butter in a saucepan. Stir in flour until bubbles appear. Gradually stir in milk. Stir continuously until sauce thickens and boil. stir in cooked macaroni, cheese and vegetables.
  3. Pour into 2L ovenproof dish. Bake at 200 degrees C, for 10-15 mins or until top is golden and heated trough.

Nasi Goreng (Indonesian Fried Rice)



This is very famous dish , actually so many delicious indonesian food, but i don't know why this is more popular, perhaps its easy to make. When topped with egg, its "special" fried rice.

Ingredients

(serves 2)

  • 21/2 tbs oil
  • 200g chicken breast fillet,trimmed,thinly sliced
  • 2 tsp sambal oelek
  • 1 garlic clove, crushed
  • 2 brown onion,crushed
  • 4 green shallots, ends trimmed, cut into 3cm lengths or Frozen mix vegetables (peas ,carrot and corn)
  • 660g (4 cups) cooked jasmine rice or long-grain rice, cooled
  • 1 tbs kecap manis
  • 2 eggs
  • Salt & pepper
  • Lebanese cucumber, thinly sliced, to serve


Method

  1. Heat 2 teaspoons of oil in a wok or frying pan over high heat. Add the chicken and stir-fry for 2 minutes or until cooked. Transfer to a plate.
  2. Heat the remaining oil in the wok. Add the sambal oelek, garlic and the white sections of the shallot and stir-fry for 1 minute or until aromatic.
  3. Add the chicken, rice, kecap manis and the green sections of the shallot(or frozen veg). Stir-fry for 2-3 minutes or until well combined and the rice is heated through. Divide among serving dishes.
  4. Add enough oil to the wok or frying pan to grease. Crack 1 egg into the wok. Cook for 1-2 minutes or until the white sets and the yolk is almost set or until cooked to your liking. Transfer to a plate. Repeat with the remaining egg, reheating the wok between batches. Place the fried eggs on the nasi goreng and top with cucumber.


Notes & tips
Tip: If you're not in a hurry, for the most authentic result, cook the rice a day ahead, spread it over a shallow dish and store, uncovered, in the fridge overnight. This prevents the rice sticking together in the wok.

Cheesecake brownies




Happy New Year 2008 for everyone!!, please enjoy this cheesecake brownies, pretty easy to make and its yummmmmyyy! its never enough to eat a piece, its summer here so, its a bit too hot if i bake something too long :( Btw I hope everyone enjoying your holiday (like us... We went to see real parade of penguins in Phillip Island), here is the recipe..

Cheesecake brownies

  • 125 butter, chopped
  • 150 dark eating chocolate, chopped coarsely
  • 1 egg
  • 2/3 cup (150 g) caster sugar
  • 3/4 (110 g) plain flour
  • 1/4 (35 g) cup self rising flour

Topping


  • 250g cream cheese
  • 1 teaspoon vanilla extract
  • 1/3 cup (75g) caster sugar
  • 1 egg
  • 1/2 cup (125ml) cream

  1. Preheat oven to 180 degrees . Grease deep 19-cm square cake pan; line base and sides with baking paper, extending paper 5cm over the edge.
  2. Combine butter and chocolate in small saucepan; stir over low heat until smooth. Cool.
  3. Beat egg and sugar in small bowl with electric mixer until thick and creamy. stir in Chocolate mixture and sifted flour.
  4. Spread mixture into pan; bake 10 minutes.
  5. Make topping.
  6. Pour topping over brownie base; bake about15 minutes. Cool in oven with door ajar.
  7. Refrigerate cheesecake for 3 hours.
  8. Serve topped with fresh raspberries,if desired.

Topping


Beat cheese,extract,sugar and egg in small bowl with electric mixer until smooth; beat in cream.
