A bowl of chicken soup, is always helps when you got cold, makes you fell warm. My Mom used to make this soup for me, she always put lots of veggies on this soup, but i prefer a bit simple ingredients to minimise effort, so delicious.
Ingredients:
- 2 tablespoons oil
- 1 small broccoli, washed, sliced
- 2 garlic cloves, crushed
- a pinch of salt & pepper
- 1 large carrot, peeled, thinly sliced
- 2 small zucchini, sliced
- 3 cups water
- 1/2 kg skinless chicken, lovely legs
Method:
Heat oil in a large saucepan over medium heat. add garlic. Cook, stirring, for 1 minutes or until soft but not coloured. Add water, bring to boil, add chicken, cook for 10 minutes, add carrot, add zucchini and broccoli . Reduce heat to low. Simmer, partially covered, stirring occasionally, for 30-40 minutes or until vegetables are tender.
Remove chicken legs from soup. Allow to cool slightly. Remove meat from bones. Roughly chop chicken meat and add to soup. Season with salt and pepper. Ladle soup into warmed bowls. Serve.
