My First Cheese cake( no bake)





Finally i made my first cheesecake,after i bought cheesecake book (women's weekly) everything seems to be first ya? but Alhamdulillah success, apalagi suami sampe ngebela-belain beli gelatine ke supermaket malem-malem (saking kepengennya cheesecake tuh.. hehe) kita emang penggemar berat cheesecake, kalo ke cafe mana aja biasanya makannya cheesecake ( walaupun suka bingung milih antara brownies en cheesecake!), alhasil pengen buru2 nikmatin, tapikan cheesecake harus di diamin dikulkas minimal 4 jam dulu, udah gitu kalo mau kasih topping juga harus tunggu cheesecakenya set, jadi baru bisa dimakan besoknya, pokoknya gak sabar deh... tapi pas lihat hasilnya en nyobain puasss lah!!, udah gitu ngak pake manggang di oven lage.. monggo mas dicoba.
Low-fat Strawberries and cream Cheesecake
  • 12 savoiardi sponge finger biscuits
  • 1/2 cup (155 gr) strawberry jam, warmed
  • 2 tablespoon hot water
  • 350 gr strawberries
  • 1/4 cup (80 gr) strawberry jam, warmed, strained, extra
  • 1 tablespoon lemon juice( i used i small can baby fruit summer gel, heated in heatproof bowl until liquefies)

Filling

  • 1 Tblesppon gelatine
  • 1/4 cup (60ml) water
  • 500 gr low-fat Ricotta
  • 1 teaspoon finey grated lemon rind
  • 1/4 cup (55 gr) caster sugar
  • 300 ml low fat cream
  • 2 teaspoon lemon juce
  • 3 egg whites

Method:

  1. Grease base of deep 19 cm square cake pan (i used 24cm springform tin) ; line base and sides with plastic wrap, extending wrap 5cm over sides of pan, trim one round edge from each biscuit. Place biscuits in single layer over base of pan: brush with combined jam and the hot water.
  2. Make filling by sprinkling gelatine over the water in small heatproof jug; stand jug in small saucepan of simerring water. Stir until gelatine dissolves; cool 5 minutes.
  3. Beat Ricotta, rind and sugar in medium bowl with electric mixer until smooth; beat in cream and juice. Stir in gelatine mixture.
  4. Beat egg whites in small bowl with electric mixer until soft peaks form; fold into ricotta mixture in two batches.
  5. Pour filling over base. Refrigerate overnight.
  6. Serve cheesecake topped with strawberries, brushed with combined extra jam and juice (i brushed with baby summer fruit gel and refrigerated again for a few hours before cutting/ serve).

Tip:Use hot dry sharp knife to cut cheesecakes

Wah akhirnya kesampaian juga bikin cup cakes hias, walaupun ngak ada special occasion, praktek aja kan ada pepatah bilang "practice makes perfect", walaupun masih belum rapih,duh untung anakku being good girl today after we went to mothers group, maybe because she was so happy to meet he friends again, capek kuga sih tapi kalo udah melihat hasil foto plus pujian dari suami,en senyum dari Ellyn capeknya hilang deh. Aku pake warna ink, hijau, en biru, don't forget to give me comment ya...

Another Shepherd's pie


I found this recipe from Recipes+ magazine (july,august 2007), the original name is vegie shepherd's pie, although i don't have beef mince, i used chicken mince ( my hubby said this is good creation & delicious "P) .
Another Shepherd's pie
(serves 4)
  • 1 table spoon olive or canola oil
  • 1 onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 stick celery,finely chopped
  • 1 cup broccoli, cut in small pieces
  • 500 gr lean beef mince(i used chicken mince)
  • 1 table spoon plain flour
  • 500 gr jar tomato pasta sauce
  • 1/2 cup frozen peas
  • 1/2 cup sweet corn kernels (canned or frozen)
  • 500 gr potatoes, peeled, roughly chopped
  • 1/2 cup low-fat milk, warmed
  • 1-2 tablespoon chopped parsley

Method:

  1. Heat oil in large frying pan over moderate heat. Add onion, carrot, celery and broccoli. Cook and stir for 5 minutes. Increase heat: add mince and, using a fork to break up lumps, cook until brown. Sprinkle with the flour. Cook and stir constantly for 1 minute.
  2. Stir in pasta sauce, reduce heat, simmer 15 minutes. Add peas and corn: simmer for 5 minutes. Season to taste with salt and black pepper.
  3. Meanwhile, cook potatoes in boiling water for 10 minutes or until tender. Drain: return to pan. Mash with warm milk until smooth. Season to taste and stir in parsley.
  4. Spoon beef mixture into any ramekins. Top with mash and roughen the surface with the fork.

Raviolli Pasta ala Ti


Hari sabtu en minggu biasanya berkreasi ria buat dinner, pas suami bawa ravioli dari supermaket, kayaknya kok aneh ya kalo di bikinin saus putih, akhirnya karena masih ada tomato paste en olive, jadi deh saus yang delicious ini, monggo dicoba... ngak ribet kok(apalagi my baby udah mulai grumpy, mesti speedy cooking).

Ravioli pasta ala Ti
(serves 2)
  • 1 packet of Ravioli
  • 1 small onion, chopped
  • 1 table spoon olive oil (or butter)
  • 2 ripe tomatoes, chopped (i used can tomatoes)
  • 1 tablespoon sliced olives
  • 2 tablespoon tomato paste
  • 1 tablespoon fresh chopped basil
  • salt and pepper
  • fresh parsley to garnish
  • Parmesan cheese, to serve

Method:

  • Heat the oil/butter in a large frying pan, add the onion and cook over low heat until soft, add the basil,tomato, tomato paste and sliced olives, and cook for 3 minutes, season to taste with salt and pepper.
  • Meanwhile, cook the pasta in a large pot of boiling water until al dente. Drain.
  • Toss the sauce through the pasta. Garnish with parsley and sprinkle with the parmesan cheese.

Ti's fruit salad


Mumpung masih musim strawberry and mandarin nih, kemarin sih bikin Strawberry Muffin juga tapi keburu habis jadinya ngak di posting deh, hehehe, duh puas banget deh rasanya lihat hasil fotonya, btw aku juga baru tau caranya supaya bikin foto dari dekat dengan jelas, jadi bangga sama diri sendiri gitu, alias GR. dari kemarin2 cari buku manualnya ngak tau dimana, akhirnya coba2 sendiri aja, yesss..... im so excited to take another pictures, haha.. selamat mencoba! and dn't forget to give me comment.

Ti's Fruit salad
  • 2 kiwi fruits, peeled, halved lengthways, sliced
  • 5 strawberries, hulled, halved or quartered(depending on size)
  • 2 mandarins or orange (i used small mandarins) peeled, separated

Place the kiwifruits, strawberries, and mandarins and the lemon syrup in a large bowl, toss gently to combine, spoon fruit and syrup into serving glasses, serve. (this salad is delicious drizzeled over ice cream)

Lemon syrup:

  • 2 Lemons (squeeze)
  • 1/4 caster sugar

Disolved the sugar in lemon juice.
